Airfryer Fudge Brownie Muffins Recipe

Airfryer Fudge Brownie Muffins

Yes, you can cook muffins in your Airfryer.

Cooking Muffins in an Airfryer

Philips Airfryer manual says "You can use silicone or paper cupcake cups or molds to bake cupcakes or muffins in the Airfryer." I used silicone cupcake cups. The muffins stuck to the bottom of the cups a little so I would spray them lightly with non-stick cooking spray next time.

Fill the cups 2/3's full with batter and place in the basket. The cups will get very hot so remove them from the AirFryer with tongs or oven mitts.

Recipe for Airfryer Fudge Brownie Muffins

1/2 cup butter or margarine
1/4 cup unsweetened cocoa powder
1 cup sugar
2 large eggs, lightly beaten
1 teaspoon vanilla
3/4 cup all-purpose flour
1 teaspoon ground cinnamon
1/4 cup chopped pecans

Microwave butter or margarine on HIGH in a microwavable bowl for 1 minute or until butter melts. Mix in cocoa powder; set aside. In a medium bowl, combine sugar, eggs and vanilla. Add butter mixture, flour, cinnamon and nuts. Stir just until the dry ingredients are moistened.

Spray non-stick cooking spray lightly on the inside of 10 silicone muffin cups. Fill cups two-thirds full of batter.

Preheat Airfryer to 350 degrees for 3 minutes. Cook 5 muffins for 15 minutes or until an inserted toothpick comes out clean. Repeat with a second batch. Let cool for about 10 minutes before removing muffins from the silicone cups.

Yield: 10 muffins.

*NOTE: *I use a Philips Airfryer in all the Airfryer recipes.
